Sweet potatoe/apple cobbler

2 Large Apples, cored and cut into 1-inch chunks
2 large Sweet potatoes, peeled and cut into 1-inch chunks
½ cup turbinado sugar
½ cup oat bran, milled into flour (can use food processor or blender)
½ cup thin oats
½ tsp. cinnamon
1/3 cup unsalted butter This is not necessarily low in calories but it is low in fat and especially saturated fat. It is a great treat for those trying to behave.
Mix the apples and sweet potatoes in a 9-inch pie pan, and sprinkle with 2 tablespoons of the sugar. Mix the remaining sugar, oat bran, oatmeal, and cinnamon in a bowl. Work the butter in a bit at a time (vegetarians can use coconut oil) until crumbly. Sprinkle the crumbs over the apple and potatoes. Pre heat the oven to 350*F. Bake about 50 minutes, or until the potatoes are tender and the topping is browned. Serve when still warm. For an extra treat beat chilled evaporated skim milk with a teaspoon of vanilla for a “whipped cream” topping. |
