Muffins for Class

Ingredients:
1-1/2 cup flour of choice
3/4 cup flax meal
3/4 cup bran of choice
1 cup organic brown sugar
2 tsp. baking soda
1. tsp. baking powder
1/2 tsp salt
2 tsp. cinnamon
1-1/2 cup shreaded carrots
2 peeled and shredded apples
1/2 cup raisins
1 cup chopped nuts
3/4 cup milk - i use nut milk
2 beaten eggs
1 tsp. Vanilla
2 Tbsp. vegetable oil Directions:
Mix togather flour, flax meal,oat bran, sugar, baking soda, baking powder,
salt and cinnamon in large bowl. Stir in carrots, apples, raisens and
nuts. Combine milk, eggs, vanilla, and oil.Pour liquid ingredients into
dry ingredients. Stir until ingredients are moist. Do not over mix. Fill
muffin cups 3/4 full. Bake 350* for 15-20 min.
